The day begins in Cambridge with a guided visit to the stunning Tapestry Hall and the vibrant Gaslight District, where heritage architecture meets contemporary creativity. Along the way, you’ll be entranced by Meander, play with River Lines, and connect with Hello Hello before wandering through the sculpture garden and crossing the picturesque Grand River. We’ll stroll through the historic streets of downtown Galt, soaking up its old-world charm, and make a sweet stop at Reid’s Candy Shop for a classic chocolate treat.
Next, settle in for an elegant afternoon tea at Little Mushroom Dining Lounge, featuring freshly baked scones, delicate tea sandwiches, and irresistible petit fours—an indulgent pause to savour.
To cap off the day, we head to Four Fathers Brewery for a behind-the-scenes tour and beer tasting. Enjoy locally crafted brews, some friendly games, and even a chance to check out the pickleball court. It’s a perfect blend of culture, flavour, and fun—don’t miss this deliciously local experience.

Step back in time and savour the flavours of Waterloo Region on this immersive local tour — perfect for everyone who loves heritage, history and hyper-local food.
The day begins with an interactive visit to Doon Heritage Village at the Ken Seiling Waterloo Region Museum, where you’ll experience life as it once was through beautifully preserved buildings, costumed interpreters, and hands-on moments that bring the past to life. Enjoy traditional treats from a Mennonite kitchen, offering a delicious glimpse into the region’s culinary roots.
For lunch, we’ll gather at Borealis Bar & Grille, proudly known for its obsessively local approach to Canadian cuisine. Expect thoughtfully prepared dishes that celebrate regional producers and seasonal ingredients—an inspiring stop for anyone passionate about local food systems.
The afternoon takes us into the rolling countryside for a visit to AppleFlats Crab Apple Farm, where you’ll enjoy a guided tour and tasting. Discover how this unique farm transforms crab apples into distinctive ciders and culinary products, and taste the results in a setting that perfectly captures the spirit of Waterloo Region.
Tours are $75 per day (includes lunch and transportation) and can be purchased as part of an overall conference registration to companions.
