The five Nordic countries of Denmark, Finland, Iceland, Norway, and Sweden are excited to be partnering with the CCF this year to raise awareness of New Nordic Cuisine, how it has evolved over time, and how sustainable food production methods – such as growing climate-friendly ingredients and shifting to circular and bio-based economies – play a role in mitigating environmental degradation and climate change. Through a series of initiatives being rolled out in-person, in-print, and online between January and June 2023, Nordic culinary experts and representatives will be engaging with CCF members and Canada’s broader culinary community to demonstrate New Nordic culinary techniques, ingredients, and food production practices. Throughout, they will also be underlining the importance of women’s equal representation in the culinary sector.
