Connor’s workshop will engage the audience with food preservation as a natural way to navigate the seasons in our country and navigate the difficult circumstances that have been occurring in our world as of late. Connor, we define some basic fundamentals in food preservation and how these principles can be utilized professionally, in the restaurant, or in your personal life. 

The United States is leading the way in food preservation offering professional training in most states through University co-operatives. There is a large gap in education on everything food preservation and he believes that as chefs we have a huge opportunity/responsibility to reassert ourselves as trade professionals and take the lead in Canada to educate up-and-coming cooks, society, colleagues, friends, and family on safe food preservation methods.
